Sweet and Sour Cabbage

¼ cup (60 mL) unsweetened pineapple juice

1 tsp (5 mL) chopped fresh ginger

1 medium onion, cut into eighths

2 red peppers, shredded

1 lb (450 g) cabbage, shredded

3 tbsp (45 mL) sugar or substitute

3 tbsp (45 mL) white vinegar

1 tbsp (15 mL) salt-reduced soy sauce

1 tbsp (15 mL) cornstarch

¼ cup (60 mL) stock

1. Health pineapple juice in a non-stick pan.  Add ginger, onion, and red peppers, and stir-fry for 2 minutes. Add cabbage and cook covered for 2 minutes. Stir with sugar, vinegar and soy sauce.

2. Blend cornstarch with stock. Stir to thicken and serve.
